Recipe: Kare Udon

Yet another instagram related recipe post XD [ie i posted it on instagram and you asked for the recipe XD]

Curry Udon

Ingredients [makes 4 portions]
400g of cooked udon* –> i am assuming you are eating 100g each.
100g thinly sliced pork or chicken
1 Spring onion finely sliced
Garnish – whatever else you wish to add. Tempura goes great XD

*cook according to instructions on udon packet.

Soup
1 litre [1000ml] dashi stock
100ml mirin
80ml soy sauce
1/2 tsp of salt

Curry Roux
1 tbs curry powder
3 tbs flour
100ml cup of water

Steps
1. Bring soup to boil. Add pork
2. Add curry roux still soup thickens
3. Pour over cooked noodles. Garnish with spring onions and whatever else you have.

  1. Interesting combination of dashi and curry powder. I have only tried combining miso with curry powder. Definitely will keep your unique combination in mind! Thank you for sharing.
