Have you had japanese curry?
Its a little different from other curries like indian curry or thai curry etc. There is no coconut milk or milky substance in it generally. Its not very spicy and favoured amongst children [and adults] in Japan.
However too many people make japanese curry using the instant roux cubes which are widely available on the market. If you have ever looked at the ingredients list on these instant roux cubes..you would probably not want to eat it too often. Dont get me wrong, i eat a lot of processed food XD So this is not the reason why i make my japanese curry from scratch.

Its because it just tastes SO MUCH BETTER.
NOTE: To make it easy on myself for the rest of this post and not confuse anyone, i am going to refer to japanese curry as Kare [its just the way we pronouce curry in japan]

Note: i dont claim that this is THE original recipe for making japanese curry. For example i am pretty sure the original has a bay leaf in it etc. This is just the recipe i was have from ages ago ^^There are probably TONS of other recipes for making kare from scratch
Tips:
- this is S&B curry powder http://bit.ly/aBKuW1
-to thicken the kare, you can add a little more flour/less water. you will find the consistency and color of this curry different from what you are used to. This is because it doesnt have added food coloring like instant roux cubes XD Its also a little less sweet. You can add more sugar to adjust though.
- busy ladies out there, save yourself a little time in the kitchen by doing all your chopping at one go!

As u can see in the pic above, i have cut potatoes and carrots for my curry as well as sukiyaki later this week [in the labelled plastic bag] and i am preparing individual portions of potato for a potato baked dish as well. You can freeze these and cook it anytime. My policy in the kitchen is “minimum effort, maximum result” XD
-try substituting the sugar with apple juice or grated apple. its even better.

FYI this batch of kare was actually made with apple juice! This is apple juice i bought in Nikko when i went there last weekend!
-Whether you are making kare from scratch or from instant roux, i reccomend you make a HUGE batch of it.
They freeze REALLY well. You can freeze them in containers or even airtight ziplock bags. To thaw them, u can either microwave or just toss the ziplock bag into boiling water! How convenient is that?

And if are bored of eating just kare with rice, here are some ideas on how to use leftover curry!

u want to eat curry i make when u come here? are u sure? there are some seriously good curry stores in japan. but this is better than any chain store like coco curry or gogo curry or whatever its called in Singapore heehee

i used just pure apple juice so i assume tat means its unsweetened? btw this recipe makes a kare far less sweet than the stuff in boxes. so u might want to add more if u prefer it sweet ^^
if u want it more spicy, i think u can buy a spicer curry powder. not sure if tobasco sauce will work. or chilli powder ^^

i freeeze them! or soak it in water! they wont turn brown on you definetely ^^
if u use them soon like next day etc, soak it in water
if u use it later that week or next week or next month, freeze them ^^

i agree with you. somehow when i try to cook something my mum or grandma made. i can never get it to taste the same. even if the recipe is exactly the same T-T must be the touch of experience!

XD depends on the person i think. some ppl with that kitchen policy would rather use preboxed/premix than cooking from scratch
i dont mind cooking from scratch, i just dont want to waste too much time prepping XD
