I know some of you read this blog purely for the cooking recipes and i do apologise for the lack of them lately! However i recieved an interesting email lately from a lovely reader [Miss Saito, if you are reading this, this post is for you] saying that whilst she loved the yogurt bread or bread recipes i had posted up, she found it impossible to make them lately due to the lack of yogurt or milk in the stores in Japan. She asked if i had any alternatives.

And i do! How about using Tofu?
Tofu is a lot cheaper than yogurt or milk so this is a budget friendly recipe!

The amazing thing about this recipe is that it only requires 2 things.
Yup TWO things. Tofu and HotCake mix
Ok its a bit more if you dont have hotcake mix, but really hotcake mix is just flour,baking powder and salt.
Note: the hotcake mix i used doesnt have sugar in it. But if you use the one with sugar, tat’s ok too!! just means your bread will be sweeter

Oh and before you start, do drain your tofu as much as you can.

This weird setup i had, did not really work. Usually i try to balance the tofu on chopsticks etc [wrap tofu in muslin cloth] but for some bizzare reason i decided to try this out. it worked..well enough XD

Use equal amounts of tofu and hotcake mix.

So in my case, i used 300g of silken tofu and 300g of hotcake mix.

Mix through..

Tip: dont use a whisk, the tofu will get stuck and its impossible to whisk it anyway. i used a spatula and employed a crazy wild/cutting motion and that totally works XD

Scoop up golfball sized lumps onto a tray

I supposed you could flour your hands and roll them out nicely but i am very lazy.

You can bake these in a real oven like me [170degrees for 15mins] but you could also use the ricecooker.
Before you say anything, i have a microwave/oven type thing which is very small so it uses very little electricity and i was baking a gratin in it at the same time.

The bread is not soft as one would imagine from the name tofu bread. it actually makes a very crusty bread perfect for soups etc. There is a strong tofu/soy milk smell. So i reccomend you use cheap tofu that doesnt have a strong smell.

      yup i think pancake mix will work just fine too!!!
      i used a pancake shake thing when i was in hongkong for a few months and couldnt get hotcake mix
