As many of my regular readers would know, i used to live in USA. In CT to be exact. I lived there for two years. Not a very long time but i enjoyed my time there nonetheless! One of my favourite things to do on a weekend was to visit the Stew Leonards [supermarket of sorts] and buy this keylime pie they carried that was made by some award winning baker. Since i left USA, i havent had any since. It never occured to me that i could make my own till Miss Violet Le Beaux gifted me with a large slice when i was in Australia a month ago!
I asked her for the recipe and here is the one i made!

The recipe came from Miss Violet Le Beaux but i have added some additional instructions of my own.
Note from Miss Violet
“These measurements are converted from the imperial system (my mom got the recipe in America after all) so don’t worry if you need to go a few grams either way on some things.”
Crust
Btw if you are pressed for time or dont own an oven, u could cheat and buy a store made crust.

170g Digestive biscuits
85g Butter
2 tablespoons sugar
Preheat oven at approx. 150 Celsius.

Crush the biscuits in a plastic bag and add sugar to it.
Melt the butter and pour melted butter over the crushed biscuits and stir until it’s well mixed in.
Line a 7inch pie plate and press down with the back of a spoon until it’s firm.

Bake in the oven for 8-10 minutes. Take out and leave to cool.
*my crust was very crumbly so i think i needed more butter and it needed to bake a little longer too XD
Pie filling

395g can sweetened condensed milk
Grated rind of 1 lime*
½ cup lime juice (bottled is fine but if you can’t get it then it’s about 5-6 limes)
1-2 drops green food colouring
226g whipped cream
*i didnt have any actual lime on hand so i didnt use the grated lime..just bottled lime juice. XD
i found whipped cream made with soy milk !!!

it does not contain any dairy. i cant really taste the difference.
In a large bowl, mix the sweetened condensed milk and the lime juice slowly until it comes together.

Stir in the grated lime rind. [if u are using any, i didnt XD]
Add the food coloring.

I know the original keylime pie should be yellow due to the nature of the keylime being yellow in color but i am not using keylime anyway so i figured its ok to color it. Miss Violet made me a pink one when she made it for me!!!
Whip the cream with electric beaters until it’s light and fluffy, then gently fold it into the other mixture with a rubber spatula.

Dont stir the cream in..just fold it in.
Pour it into the pie crust

Let it chill overnight
After chilling for 24 hours it’s ready to serve, but maybe a little runny

Usually after 48 hours it’s a little firmer.

See how crumbly my crust is? XD next time i will use more butter and bake it a little longer.
The cake was a huge success at the pot luck brunch i attended!!
