As you know from my last post, i am sick this week so i am using the opportunity to post old blog posts i written ages ago but never posted XD

Regular readers will know i adore tart tasting desserts.
A few ago, i shared a recipe for keylime pie on this blog. That has become a staple in this household but lime is hard to buy in Japan [even lime juice], so i have been searching for a lemony dessert. I chanced upon this awesome recipe from All Recipes.com on pinterest [I LOVE THIS SITE] i simply had to try!
First of all, we will make the crust

Ingredients:
1 cup butter, softened
1/2 cup powder sugar
2 cups all-purpose flour
Preheat oven to 325F.(180 degrees C)
Mix the flour & powdered sugar and beat on low speed until blended. Then add the butter which has been cut in chunks beforehand

mine ended up kinda paste like..i am not sure this is correct. i think it should look like breadcrumbs

Dump the entire mixture into a 9×13 pan and gently press onto the bottom.

Bake for 15 to 20 minutes in the preheated oven, or until firm and golden
REDUCE THE OVEN TEMP TO 300F.
Now to make the filling:

Ingredients:
4 eggs
1 1/2 cups white sugar
1/4 cup all-purpose flour
2 lemons, juiced
I didnt have any real lemons at home..uh so i just used fake lemon juice XD

In another bowl, mix the remaining sugar and flour.
Then mix in the eggs and lemon juice.

Pour over the baked crust.
Bake for an additional 20 – 30 minutes in the preheated oven.

I baked mine for a little too long i think cos the top layer is hardish chewy crust but i kinda like it!
Remove and let cool to room temp.
